Celery Salad with Walnuts, Dates and Pecorino

This was a fantastic salad and thoroughly enjoyed at Thanksgiving.  I do agree that the amount of dressing should be increased.  At Christmas I will make this with figs instead of dates and add a little baby red romaine for color.
